FETTUCINI ALFREDO 
1 lb. fettucini
2 tbsp. butter
1 c. cream
3 egg yolks
Pinch of salt
Fresh ground pepper
4 tbsp. Parmesan or fresh grated (better) cheese

Boil noodles; drain, toss in pan over medium heat until quite dry. Add cream, egg yolks, salt and pepper; toss continuously. When quite hot, add cheese. Add more cheese or cream to desired smooth consistency. Just before serving, add butter.
