FETTUCINI ALFREDO | |
1/2 of 1 lb. pkg. fettucini or linguine noodles 1/3 c. softened butter 3/4 c. whipping cream 3/4 c. freshly grated Parmesan cheese (not canned) 1/2 tsp. salt 1/8 tsp. pepper In Dutch oven, boil noodles and drain. Remove pan from heat. In same pan, quickly combine noodles and butter. Add half the cream and half the cheese and toss. Add remaining cream and cheese, salt, and pepper. Serve immediately. This dish is a little tricky in that you have to combine the butter, cheese, and cream quickly to the hot noodles to achieve a creamy sauce. Serves 2-3. |
