CHICKEN SALTIMBOCCA 
1 1/2 lb. chicken cutlets
1/4 lb. boiled ham or prosciutto
1/4 lb. Swiss cheese
2 tomatoes
Salt
1/4 to 1/2 c. white wine
Plain or seasoned bread crumbs
2 or 3 tbsp. Romano or Parmesan cheese
Fresh or dried chopped parsley
1 stick melted butter
Pepper
1/4 to 1/2 lb. fresh mushrooms

Between waxed paper flatten chicken pieces with mallet. Place a piece of ham, cheese, wedge of tomato on chicken, roll and secure with round toothpicks. Prepare mixture of crumbs, cheese, parsley, salt and pepper. Melt butter, dip roll into butter then into crumbs. Place in baking dish. Bake at 305 degrees for 35 to 40 minutes uncovered on top shelf. About halfway through cooking time, add some white wine and (optional) chopped fresh mushrooms.
