CHICKEN SALTIMBOCCA 
3 chicken breasts, skinned, boned and halved lengthwise
6 slices boiled ham, thinly sliced
6 slices Mozzarella cheese
1 med. tomato, seeded and chopped
1/2 tsp. sage
1/2 c. dried bread crumbs
3 tbsp. grated Parmesan cheese
2 tbsp. chopped parsley
1/4 c. butter, melted

Place chicken on cutting board, cover with waxed paper and pound lightly. Remove wrap. Place ham and cheese slice on each chicken piece cutting to fit. Top with some tomato and dash of sage. Tuck in sides - roll up, pressing to seal well. Preheat oven to 350 degrees. Combine bread crumbs, Parmesan and parsley. Dip chicken in butter, roll in crumbs and place in shallow pan. Bake at 350 degrees for 45-55 minutes. Serves 6.
