BAKED FISH FILLETS 
1/4 c. vegetable oil
1/4 c. lemon juice, fresh or bottled
1 lb. fish fillets, any kind
3 tbsp. bread crumbs
3 tbsp. Parmesan cheese
1/2 tsp. paprika

In small bowl combine vegetable oil and lemon juice with wire whisk or fork. Pour into 9"x12" glass baking pan. Rinse fillets in cold water. Pat dry, put in baking dish, turn fillets over to coat with oil-lemon mixture. Sprinkle fillets with bread crumbs, then with Parmesan cheese. Dust with paprika. Bake at 400 degrees about 15 to 20 minutes or until golden brown. Serves 4.
