BISQUICK BROCCOLI CASSEROLE 
2 (10 oz.) pkgs. frozen broccoli, thawed
3 c. shredded cheddar cheese
1/2 c. chopped onion or to taste
1 1/3 c. milk
3 eggs
3/4 c. Bisquick
3/4 tsp. salt
1/4 tsp. pepper
1 tomato (opt.)

Preheat oven to 400 degrees. Grease 9"x9" pan. Run broccoli under cold water to thaw. Mix broccoli with 2 cups cheese and onion. Beat milk, eggs, Bisquick, salt and pepper until smooth. Pour over broccoli mixture in plate. Bake until knife comes out clean (25 to 30 minutes). Top with remaining cheese and bake 1 to 2 minutes until cheese melts. Garnish with tomato if desired.

I also like to add chicken or ham to this dish to make it a little different. also remember to use whole milk not 2% or 1% as it will not set up while baking and you will have a soupy mess.
