“CHICKEN QUESADILLA PIE” IS IN:

CHICKEN QUESADILLA PIE 
Really good as a quick-to-fix light lunch or supper.

1 (10-inch) flour tortilla (burrito size)
3 cups shredded cooked chicken
1 Roma plum tomato, chopped
1 (4 oz.) can green chiles, drained
2 cups shredded Cheddar cheese or Pepper Jack
1/2 teaspoon each salt and pepper
2 eggs
1 cup milk
1 cup flour
1 teaspoon baking powder

Preheat oven 450°F (425°F for glass) and coat 9-inch pie pan with cooking spray. Press flour tortilla into prepared pie pan.

In large bowl, combine chicken, tomato, chiles, 1 cup shredded cheese, salt and pepper. Spoon filling over tortilla in pan.

In bowl whisk eggs, milk, flour and baking powder until blended and smooth. Pour over filling. Sprinkle top with remaining 1 cup shredded cheese.

Bake 20 minutes or until golden brown. Allow to stand 5 minutes before slicing into wedges.

Makes 6 servings.
