SCALLOPED POTATOES 
1 c. skim milk
2 tsp. cornstarch
1/4 tsp. salt
1/4 tsp. pepper
Nonstick spray coating
2 lg. potatoes
1/4 c. chopped onion
2 tbsp. grated Parmesan cheese

For sauce, in a small saucepan stir together the milk, cornstarch, salt and pepper. Cook and stir over medium heat until thickened and bubbly. Remove from the heat. Set aside.

Lightly spray the sides of a 1 1/2 quart casserole with nonstick coating. Peel potatoes and slice very thin. Layer half of the potatoes and half of the onion into the casserole. Repeat layers of potatoes and onion.

Pour sauce over potato mixture. Sprinkle with Parmesan cheese. Bake, covered, in a 350 degree oven for 40 minutes. Uncover and bake for 10-15 minutes more or until potatoes are tender.

Serves 4.
