SWEET GARLIC DILL PICKLES 
2 c. vinegar
2 c. water
3 c. sugar
2 tbsp. salt
12 cloves garlic, peeled
6 heads fresh dill
6 qts. fresh sliced pickles packed firmly in canning jars
1/8 tsp. powdered alum in each qt.

Bring first four ingredients to a boil. Pour over pickles. Add 2 cloves garlic and 1 head dill to each quart. Place lid and ring and cold pack.

Cooks Note: Although the original recipe calls for no further processing, the USDA recommends processing in a boiling water bath for 10 minutes.

What will happen if you soak them in pickling lime overnight so they stay crisp? I had trouble with mine getting wrinkled and on the soft side.

Hi Faye,

It should be ok if you follow the package instructions on the lime package. I have used the Ball canning lime with good success. If you want to avoid using lime or alum for crispness, try pickling in a salt water brine. Another factor to consider is the age of the cucumbers. Cucumbers that are allowed to sit around after being picked often dry and become rubbery. Keep them submerged in cold salted water and try to use as soon as possible after being picked.
