SALMON PATTIES 
16 oz. pink salmon, canned
1 egg
1/3 cup onion, minced
2 tbsp. fresh parsley, chopped (optional)
1/2 cup all-purpose flour
1 1/2 tsp. baking powder
1 1/2 cups vegetable oil, for frying

Drain salmon. Set aside 2 tablespoons juice in mixing bowl. Mix together salmon, egg, and onions until sticky. Stir in flour. Add baking powder to juice, then stir into salmon mixture.

Form into small patties. Fry until golden brown (about 5 minutes).

Serving Size: 4

We've been eating salmon patties since we were kids (about 40 years now!) and it's nice to see someone else loves them, too. You can substitute the flour and baking powder with 1/2 cup or so of crushed saltines, 1/2 tsp. Lawry's seasoned salt and 1/4 tsp. fresh cracked black pepper. If we have it on hand, we add 1 tbsp. finely chopped fresh parsley. My mom always used lots of oil but we fry ours in a non-stick pan with 2 tbsp. olive oil with 1 tbsp. melted butter. So yummy!

I had this last night for dinner. Tell the truth I do not eat fish, my family does. So when they told me how GREAT it was I tried it. Then I ate 2 more patties. This is a first for me. I will be making Salmon Patties again.

My family never really liked salmon patties until now. My husband is an excellent cook and LOVED this recipe. He begged me to make more. He was extremely excited about it. Even my older son who doesn't like anything seafood, liked them. Crispy on the outside, moist on the inside and soooo easy to make with little ingredients. Will definitely make this again. May make it easier to get my family to eat fish now! Thanks for posting it.

I've made this a few times now. I've always loved salmon patties but never have been able to make them come out very good. These taste very similar to my Grandma's recipe and they always come out right. They are better if you make them using red salmon instead of pink.

My grandmother and mother using this same recipe and we all love it. Its fast, easy to make, with little ingredients needed. I do not enjoy eating fish let alone salmon but when my grandmother made these I feel in love. I am glad someone put the recipe up there for everyone. Enjoy! Everyone in my family does!

Not at all impressed. They were bland and didn't have much flavor. Next time, I might add some Parmesan cheese, garlic powder and some parsley for flavor. If you're going to cook this, make sure you either have splatter screens, or lots of burn gel. Plus lots of extra time to clean up the mess that it makes. Because of the moisture in the fish, there is a lot of splatter. Not sure I will waste the time, or money to make this again. If I do, I'll add the extra ingredients and let you know what how it turns out! Hopefully better!!!

I find I need more flavor in these so I add onion, bell pepper, if I have them, and Tony Chachere Cajun Seasoning to taste. You could use hot sauce instead, also garlic and onion powders.

My grandmother made these for me 60 years ago! Yummy! She used leftover mashed potatoes in them instead of flour. Do people make mashed "real" potatoes anymore?).

Creamed peas and a nice garden salad. My grandma and mother used to make these using seasoned bread crumbs in place of the flour and also chopped green pepper along with the chopped onion. Yum!
