SALMON PATTIES 
16 oz. pink salmon, canned
1 egg
1/3 cup onion, minced
2 tbsp. fresh parsley, chopped (optional)
1/2 cup all-purpose flour
1 1/2 tsp. baking powder
1 1/2 cups vegetable oil, for frying

Drain salmon. Set aside 2 tablespoons juice in mixing bowl. Mix together salmon, egg, and onions until sticky. Stir in flour. Add baking powder to juice, then stir into salmon mixture.

Form into small patties. Fry until golden brown (about 5 minutes).

Serving Size: 4

Tried this recipe today and they were delicious and I've never cared for them much except the ones my mom and Aunt made 50 to 60 years ago. They tasted like my moms! My Aunt used to put her left over white gravy in hers. I'll definitely be doing these again.

This has become a favorite. I cook them in the deep fryer 6 or 7 minutes. I often use Mackerel instead of Salmon.

I love these. We sauté the onion first and substitute brown rice flour. They need to be cooked a tad longer because of the substitution.

Have used something similar for years... however, I do NOT add flour or crackers. Just pure salmon flavor... not diluted... The can of Salmon, chopped onion & 1 egg (mixed & formed into patties)... they will be very wet but form easily. Fry as usual... Pure Salmon taste...

Have been using this recipe for 20 years. My late husband loved cream style corn poured over his. The kitchen I worked in served these salmon patties with a white sauce with hard boiled eggs cut up. I prefer mine plain with a little lemon. Excellent recipe!

I have been looking for this particular recipe for so long because it includes the juice from the can. I remember (from 60 years ago) when my mother would whip something up until it foamed, then add it to the mixture. This is definitely the recipe! Crunchy and delicious!
