SALMON PATTIES 
16 oz. pink salmon, canned
1 egg
1/3 cup onion, minced
2 tbsp. fresh parsley, chopped (optional)
1/2 cup all-purpose flour
1 1/2 tsp. baking powder
1 1/2 cups vegetable oil, for frying

Drain salmon. Set aside 2 tablespoons juice in mixing bowl. Mix together salmon, egg, and onions until sticky. Stir in flour. Add baking powder to juice, then stir into salmon mixture.

Form into small patties. Fry until golden brown (about 5 minutes).

Serving Size: 4

My mother made these but instead of using just flour, she used flour & cornmeal mixed. Now I make them the same way & I still love them!

OMG, this is a very good recipe I substituted the flour for pancake mix, I used all of the other ingredients except for the baking powder (didn't have any on hand). I love it, Thanks so much, I will be making these again and again!!

Might want to add for newbies to make sure the patties are not too thick when forming so that when they are firing the patties wont get too big, the taste is great tho. Thanks!

Awesome recipe... I used just enough oil to cover the bottom of my sauteed pan, and the cakes got a wonderful crust to them with minimal splattering. My dad LOVED them! Added some fresh garlic, siracha sauce, and paprika. Mom is a vegetarian, but she'll definitely be cooking this for dad when I'm not around. Thanks for the recipe!

I just finished making these and they came out delicious!! Nice and crispy on the outside but soft and moist on the inside. I think the baking powder is what did it because I have made salmon patties before with everything in this recipe except the baking powder. This way is a keeper.
