CHICKEN PARMESAN 
8 sm. boneless chicken breast
1 lg. eggs
Crackers (Ritz, Saltine)
Vegetable oil
16 oz. tomato sauce
1 tsp. each of basil, oregano, garlic, salt
Shredded Mozzarella or Swiss cheese

Dip chicken breasts in egg; roll in crushed crackers. Fry in 1/4 inch oil in fry pan. Remove when browned.

SAUCE: Tomato sauce and spices. Mix and simmer 15 minutes uncovered.

Place chicken pieces in baking dish and spoon sauce over to cover. Bake 40 minutes at 350 degrees. Add cheese over top; bake 10 minutes longer.
