PORK AND BLACK - EYED PEAS | |
1 lb. pork, with or without bone, cut into pieces 1 lb. smoked sausage, cut into pieces 1 med. onion, chopped 1 bell pepper, chopped 1 clove garlic, chopped 3 c. water 2 c. raw rice 1 sm. pkg. dried black-eyed peas Salt & pepper to taste Onion tops Brown the pork in a large pot. Add the sausage and brown a little longer. Add onions, bell pepper and garlic; cook until tender. Using another pot, boil the black-eyed peas in just enough water needed to cook the peas down until barely tender. Add to the parboiled peas the meat and sausage mixture, 3 cups water and the rice. Season with salt and pepper; cook until done. Add onion tops and serve. |
