There is a way to cook dryed Black eyed peas if they were not soaked overnight. I can not remember all the steps, what were they?

Wash black-eyed peas; cover with water (4 cups) and soak overnight (or bring to boil - boil 3 minutes and let stand 1 hour).

Dried black eyed peas can be prepared as follows (also works for other dried peas and beans)...Rinse dried black eyed peas and remove stones or bad looking peas. Place rinsed peas in a pan and cover with water...bring to a boil and allow to boil for 3 minutes. Cover pan and remove from heat. Let stand for one hour. This will give the same results as soaking dried peas / beans overnight.

Barb, Thank you for taking the time to post this short cut. It worked very well with black eyed peas and great northern beans.
