1 lb. dried black-eye peas
Bacon or fat-back cut into cubes
Salt to taste

Wash and pick over dry black eye peas. Put into casserole dish. Add bacon or fat back, salt and cover with water. Bake at 350 degrees for 1 1/2 hours. Add water when needed.
