BLACK-EYED PEAS WITH RICE
(HOPPIN JOHN)
 
1 LB. black-eyed peas
1 onion, chopped
1 lb. lean salt pork
2 qts. boiling water
1 c. raw rice, cooked separately
crushed red peppers

Wash the black-eyed peas, soak overnight in cold water or boil them 2 minutes and soak 1 hour or longer. Drain well, put peas in a large pot, add boiling water, onion, salt pork and seasoning. Simmer, covered for 2 hours or until peas are very soft, adding water as needed. Cook rice until dry and fluffy. Add cooked rice to cooked peas in a pot. Simmer gently until all liquid is absorbed.

I used drained canned black-eyed peas, cooked rice and leftover pork roast coarsely chopped -- it was great and my husband loved it -- so simple and so Southern!
