BBQ RANCH AND BACON POTATO
WEDGES
 
MARINADE:

In a large bowl, mix 1 teaspoon of vegetable oil with 2 tablespoons of Ranch. Add 1 slice of bacon finely chopped, 2 tablespoons of green onions then 2 tablespoons of onions, both finely chopped. MIX all together.

Add two large potatoes, thinly sliced into strips (like French fries). Mix. Stir in 1 tablespoon of BBQ sauce.

Mix in a separate bowl:

1 tsp. water
1 tsp. salt
1 tsp. pepper
1/4 tsp. chili powder
1 tsp. garlic powder
1 tsp. dried red pepper

Combine both bowls of ingredients. Let marinate in refrigerator for 3 hours. Remove and shake using a gentle up, down and around motion so as not to break up the potatoes.

COOKING:

Melt 2 tablespoon of butter and 1 teaspoon of vegetable oil in a large skillet at a temperature at medium high for 6-7 minutes consistently mix around to keep from burning (don't walk away).

Place one wedge at a time. Don't add all the marinade - only what's still clinging to the wedges when done. Serve while hot.

Makes 2-3 servings
