NELLIE'S POTATO WEDGES | |
2 tbsp. vegetable oil 1/4 cup Italian seasoned bread crumbs 2 tbsp. grated Parmesan cheese 1 tsp. Italian dressing 1/2 tsp. paprika 1/2 tsp. garlic salt 4 medium unpeeled potatoes (about 1 1/2 lb.) Spread oil in a 13x9-inch pan. Combine next 5 ingredients in a arge plastic bag. Cut each potato into 8 wedges. Place 1/2 of potatoes in bag - shake well to coat. Place in a single layer in pan. Repeat process with remaining potatoes. Bake uncovered at 350°F for 40-45 minutes or until tender, turning one time after about 25 minutes. I save heels of bread and freeze, then add Italian Seasoning and mix in processor for the Italian Bread Crumbs. This does have a nice crust. Submitted by: Phyllis Chittum |
