BAKED SQUASH 
6 med. squash
1 med. onion (diced)
1 egg
3/4 to 1 tube Saltine crackers (crumbled)
black pepper to taste
3 slices bacon
grated cheddar cheese (optional)

Cut off ends of squash and boil whole squash until tender, but firm. Cut squash in half lengthwise and scoop out seeds. Place seeds in bowl and mix in onion and egg. Mix in crackers until liquid is absorbed. Add pepper to taste. Place squash shells in greased baking dish and refill with mixture. Place 1/4 slice of bacon on top of each squash. Bake at 375 degrees until bacon is done. Remove from oven and sprinkle with cheese.
