GANMODOKI 
8 tofu fritters
4 c. soup stock
4 tbsp. sugar
1 tbsp. mirin
3 tbsp. soy sauce
1 tsp. fresh ginger root, minced

Place tofu fritters in a boiling water for 2 to 3 minutes to remove grease. Drain and squeeze well. Mix stock, sugar, mirin and soy sauce and boil it once. Place tofu fritter into the soup base. Put ginger into soup base and simmer 10 to 15 minutes. Serve hot. Makes 4 servings.
