CHICKEN MYSTERY HOT DISH 
1/4 c. butter
1/4 c. flour
1 pt. half and half
1/2 tsp. salt
1/4 tsp. pepper
3 c. cubed cooked chicken
1 c. chow mein noodles
1/2 c. sliced or slivered almonds
4 oz. jar chopped pimentos (drained)
1 (4 oz.) can mushroom stems and pieces, drained
1 c. sliced celery
1 (8 oz.) can sliced water chestnuts, drained
2/3 c. mayonnaise mixed with 1 tbsp. lemon juice

Melt butter in a medium-size heavy saucepan over low heat. Add flour and stir until smooth. Let mixture bubble about 3 minutes, stirring often. Gradually stir in half and half. Let simmer, stirring constantly, until thickens.

Stir in salt and pepper. Remove from heat. Put remaining ingredients except sauce and mayonnaise in a baking dish. Stir in mayonnaise, then white sauce. Bake 30-40 minutes in 350 degree oven until hot and bubbly. Makes 6 servings.
