BARLEY CASSEROLE 
1 1/2 c. barley
3 1/2 c. water
1 onion, minced
1/2 green pepper, minced
1/2 tsp. salt
1 pinch oregano or basil
1 c. grated cheese
1 1/2 lb. loose sausage or ground beef

Brown sausage or ground beef heavy pan; drain. Place sausage and all other ingredients except cheese in a covered baking dish and set in a 375 degree oven to bake. After about 45 minutes, remove from oven and mix thoroughly; then return to oven and bake for another 15 minutes or until barley is tender. Sprinkle cheese on top and bake, uncovered, about 5 minutes more or until cheese melts. Serves 6.
