BARLEY MUSHROOM CASSEROLE 
1 1/2 c. uncooked barley
3/4 c. butter
3 c. chicken or beef broth
1 lb. mushrooms
1 c. minced onion

Combine all except mushrooms in shallow casserole. Bake, covered 1/2 hour in 350 degree oven. Add mushrooms and bake at least 1/2 hour until fluffy and tender. Canned mushrooms may be substituted for fresh. Vary amounts of onion and mushrooms to suit individual taste. Makes 8 servings.
