BROCCOLI AND CHEESE CASSEROLE 
3 (10 oz. each) pkg. chopped broccoli
1 lb. Velveeta cheese, cubed
1/4 lb. Ritz crackers, crushed
2 sticks butter

Melt butter and stir in cracker crumbs. Cook broccoli. Layer broccoli and cheese in casserole dish. Put cracker mixture on top. Bake at 350 degrees until bubbly, about 30 minutes.
