CHEESY CHICKEN CORN CHOWDER 
1 1/2-2 lbs. boneless chicken breast, cut in pieces
1 med. onion, chopped
4 stalks celery, chopped
2 cans cream of chicken soup
1 (16 oz.) can whole kernel corn (with liquid)
1 c. milk
Velveeta cheese (med. size brick)

In a large pot combine chopped onion, chicken and 1 cup water. Boil, then simmer 15-20 minutes (until chicken is cooked). Add remaining ingredients. Cook on medium to low heat for 1/2 hour. Keep stirring and checking so cheese doesn't burn. This is so good (even as a meal) !
