MINI - CHEESECAKES 
2 (8 oz.) pkg. cream cheese, softened
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
18 vanilla wafer cookies
18 cupcake paper cups
1 can (21 oz.) prepared pie filling (any kind)

Combine cream cheese, sugar, eggs, lemon juice and vanilla. Beat until smooth. Place 1 vanilla wafer in bottom of paper cups and place in muffin pan. Fill each 2/3 full with cream cheese mixture. Bake 15 minutes at 375 degrees. Cool. Top each with tablespoon of pie filling. Chill.
