PORK CHOPS AND RICE 
6 pork chops
1/2 c. uncooked rice
3 3/4 c. strained tomatoes
3 tbsp. chopped green pepper
3 tbsp. chopped onion
2 tsp. salt
1/4 tsp. pepper
2 tbsp. shortening
Enriched all-purpose flour

Salt and pepper pork chops and dredge in flour. Melt shortening in skillet on high heat and brown pork chops on both sides. Mix together the uncooked rice, tomatoes, salt, pepper, onion and green pepper; pour over pork chops. Place lid on skillet. When steam escapes freely from vent in cover, reduce heat. Cook 50 minutes. Serves 6.
