Instant mashed potatoes
1 pkg. dry sour cream mix
2 c. shredded Cheddar cheese

Mix mashed potatoes according to package for 6-8 servings and add dry sour cream mix. Spread cheese on top. Put in oven or microwave until cheese melts. Serve.
