ROBIN'S PEACH COBBLER | |
Great warm with vanilla bean ice cream! 2 (29 oz. ea.) cans peaches (I use Del Monte) 2 cups sugar, divided 1/2 cup (1 stick) butter (no substitutes!) 1 1/2 cups milk 1 1/2 cups self-rising flour 2 tsp. cinnamon 1 tsp. nutmeg In a large pan combine peaches, 1 cup of sugar, cinnamon and nutmeg. Bring to a boil then turn down and simmer until the mix is almost like a syrup. When the peach syrup is almost done, preheat the oven to 350°F, put the stick of butter in a 9x13-inch baking dish and melt in the oven. In a medium bowl mix the remaining cup of sugar, flour, and slowly add the milk. After removing the dish from the oven spoon the peach syrup on top of the butter, then slowly pour the flour mixture on top. Bake at 350°F for 30 to 45 minutes. Submitted by: Robin Williams |
