WHITE BATTER BREAD
1 c. milk
1 c. warm water
3 tbsp. sugar
2 pkg. or cakes of yeast (or 1 1/2 tbsp. loose yeast)
1/2 tbsp. salt
2 tbsp. butter
4 1/2 c. unsifted flour

Scald milk, stir in salt, sugar and butter. Let cool to lukewarm. Measure warm water into large bowl. Add yeast and stir until dissolved. Add lukewarm milk mixture. Stir in flour. Batter will be fairly stiff. Beat until well blended, about 2 minutes. Cover and let rise in warm place, free from draft, until double in bulk, about 40 minutes. Stir batter down, beat vigorously, about 1/2 minute. Put into 1 large or 2 small greased bread pans. Bake at 350°F to 375°F oven for 50 minutes. I make this frequently, it always works well for me.
