PORCUPINE MEAT BALLS 
1 c. Minute Rice
1 lb. ground beef
1 egg, slightly beaten
2 tsp. grated onion
2 tsp. salt
1/8 tsp. marjoram
Dash of pepper
2 1/2 c. tomato juice (or use 2 - 8 oz. tomato sauce)
1/2 to 1 c. water

Combine rice with beef, egg, onions, salt, marjoram, pepper and 1/2 cup tomato juice. Mix lightly. Shape mixture into 18 balls and place in skillet. Add water to remaining 2 cups tomato juice. Pour juice over meatballs in skillet. Bring mixture to a boil. Reduce heat and simmer, covered, 15 minutes, basting occasionally. Makes 6 servings, 3 meat balls each. When using 2 (8 oz.) cans of tomato sauce, mix with 1/2 cup of water.
