CHEESE AND ONION BOEREGS | |
2 med. onions, finely diced 1 tbsp. olive oil 1/2 lb. Monterey Jack cheese, shredded 6 tbsp. melted butter 8 sheets filo dough Saute onions in olive oil until tender. Remove and let cool. Preheat oven to 400 degrees. Brush 1 sheet of filo dough with butter, making sure to cover the edges. Place a second sheet of filo on top and repeat. Using tip of sharp knife, cut the buttered sheets of filo into 3 even strips. Fold corner to make into a triangle and continue to fold like a flag. Brush triangle top and bottom with butter and place on baking sheet. Repeat steps until all filo sheets are used. Bake 15 minutes or until golden brown. May be made in advance and refrigerated up to 8 hours before being baked. May freeze uncooked Boeregs by placing them in freezer uncovered. When frozen, wrap in plastic or foil and return to freezer. Do not defrost before cooking. Variations: May also fill with any other favorite cheese, spinach, beef, pork, etc. |
