ZUCCHINI CASSEROLE 
3 medium zucchini, don't peel
1 large onion, chopped
1 stick butter
1 can cream of chicken soup
1 c. sour cream
1 box chicken stuffing mix (stove top)
grated cheese

Bring 1 quart of water to boil. Add sliced zucchini and boil 5 minutes with the onion after it has returned to boiling. Drain well in colander. In separate pan, melt butter and add soup and sour cream. Stir in both packages of stuffing mix. Toss in zucchini. Mix gently. Place in greased casserole and cover.

Bake at 350°F for 30 minutes. Uncover and top with grated cheese.

Bake 10 minutes longer.

I add ground chicken or beef, browned and mushrooms.
