ZUCCHINI CASSEROLE 
1 lb. hamburger
1/2 tsp. salt
1/4 tsp. pepper
3 c. zucchini, sliced or shredded
1 onion, chopped
1 can cream of chicken soup
1 c. sour cream
1 (6 oz.) pkg. Stove Top Stuffing
1 c. grated carrot

Cook zucchini and onion for 5 minutes. Brown hamburger and seasonings. Prepare stuffing according to directions. Spread half of meat in greased 9x12 glass pan. Top with half of stuffing mix.

Combine carrots, soup, sour cream, zucchini and onion. Lay on top of stuffing. Add rest of hamburger, then top with rest of stuffing mix. Bake 30 minutes, 350 degrees or bake in microwave 14 minutes. Can add shredded Cheddar cheese on top.

Since microwave ovens vary in power, you may need to adjust your cooking time.
