ITALIAN CASSEROLE 
1 lb. Italian sausage, browned (I use turkey sausage)
1/2 c. chopped green pepper
1/2 c. chopped onion
1 c. chopped zucchini (can use canned)
1 lg. can chopped tomatoes
1/2 c. chicken broth
1/2 tsp. salt
1/4 tsp. oregano
1/2 tsp. black pepper
1 tsp. basil
1/2 pkg. shells or ziti pasta
1/2 pkg. grated Mozzarella cheese
1/2 c. grated Parmesan cheese

Cook and drain sausage. Set aside. Saute green peppers, onion, a couple of clove garlic. Add zucchini, tomatoes, broth, and seasonings. Cook about 20 minutes. Cook pasta. Use 2-quart dish. Put in layers pasta, sauce, sausage, and cheese. Make 2 or 3 layers of each. Parmesan cheese on top. Cook at 400 degrees about 20 minutes.

This would have been better if it were more creamy. Ricotta cheese would be a good addition in the layers. Also black olives on top would have been good too.
