ITALIAN CASSEROLE 
2 lbs. Italian sausage, crumbled
1/2 c. green pepper, chopped
1/2 c. onion, chopped
1 c. zucchini, sliced
1 lg. can tomatoes, chopped
1/2 c. chicken broth
1/2 tsp. salt
1/4 tsp. oregano
1/2 tsp. black pepper
1 tsp. basil
1/2 lb. shells or Ziti pasta
1/2 lb. grated Mozzarella cheese
1/2 c. grated Parmesan cheese

Cook sausage in skillet until brown. Set aside. Drain all but 2 tablespoons sausage fat. Saute green pepper and onion lightly. (I put a couple cloves of garlic in and saute also). Add zucchini, tomatoes, chicken broth and seasonings. Cook until most of moisture has evaporated (about 20 minutes). Cook pasta and drain. Arrange layer of pasta, sauce mixture, sausage and Mozzarella cheese in two quart casserole in layers until all is used. Sprinkle with Parmesan cheese.

Bake in 400°F oven for approximately 20 minutes until lightly brown.

Makes 6 servings.
