ZUCCHINI CHICKEN CASSEROLE 
4 c. zucchini, grated
3/4 c. carrots, grated
1/2 tsp. onion powder
6 tbsp. butter
2 1/4 c. seasoned bread stuffing
1/2 c. sour cream
1 can cream of chicken soup
2 c. cooked diced chicken
1/2 c. grated cheddar cheese

Saute carrots and zucchini in 4 tablespoons butter; stir in onion powder, 1 1/2 cups of bread stuffing, soup, sour cream, cheese, and diced chicken. Turn into 2-quart casserole dish.

Toss remaining stuffing with 2 tablespoons melted butter and put on top of casserole. Bake at 350 degrees for 30 minutes or until golden on top or hot.
