ZUCCHINI CASSEROLE 
1 pkg. stuffing mix
1 stick butter
3 c. zucchini, cubed
1 pt. sour cream
1 c. cheese soup
1 c. chopped onion
pinch of garlic salt
salt and pepper
1 c. raw carrots, diced or shredded

Melt butter and mix with stuffing and seasoning packet. Boil zucchini and carrots in water 2 to 3 minutes. Drain. Mix all ingredients together and place in baking dish that has been sprayed with Pam.

Bake at 350°F for 30 to 40 minutes.

I usually double recipe and put in 13 x 9 pan. Can mix ahead and keep in the refrigerator for up to 24 hours before baking.
