VEGETABLE CASSEROLE 
1 bag frozen California Blend vegetables
1 can cream of chicken soup
1/2 c. sour cream
1 sm. onion, chopped
1/4 c. shredded Cheddar cheese
Salt and pepper
1 pkg. Stove Top chicken stuffing
4 tbsp. melted butter

Cook vegetables until barely tender; drain. Mix soup, sour cream, onions, cheese, salt, pepper, 1/2 package seasoning mix from stuffing. Put in 2 quart shallow casserole. Mix 4 tablespoons melted butter with other 1/2 package of seasoning mix and croutons. Sprinkle over vegetables. Cover and bake at 350 degrees for 1/2 hour. Serves 6.

Love this recipe. I add chicken breast pieces and serve with sour cream it is delicious. My kids even love it. You can also make chicken gravy to drizzle over top and mashed potatoes.
