AUNT JANE'S CHICKEN CASSEROLE 
1 pkg. stir-fry chicken (or cut-up chicken breasts)
1/3 c. Italian dressing (can be low-calorie)
2 c. instant rice
2 c. chicken broth
1 can French fried onion rings
1 pkg. frozen vegetables

Put chicken in casserole dish. Add 1/3 cup Italian dressing and bake for 20 minutes at 400 degrees, uncovered. Add 2 cups instant rice, 2 cups chicken broth, 1/2 the container of onion rings, and the package of frozen vegetables. Top with remaining onions and bake uncovered at 350 degrees for 25 minutes.
