CARIBBEAN CASSEROLE 
3 lbs. pork spare ribs
1 fryer chicken
1 lb. Italian sausage (or 1/2 hot 1/2 sweet), pricked
3 onions, sliced
3/4 c. ketchup
3/4 c. water
1 tbsp. salt
1 tbsp. sugar
2 tbsp. vinegar
2 tbsp. Worcestershire sauce
2 tbsp. lemon juice
1 tsp. chili powder
1 tsp. paprika
1/2 tsp. hot pepper sauce
1/2 tsp. pepper
Pinch oregano

Cook ribs in water 15 minutes. Discard water. Put meats in deep Dutch oven. Pour sauce over meats. Cover. Bake 1 1/2 hours at 300 degrees. Spoon fat off to serve. 10-12 servings.
