ARTICHOKE RICE SALAD | |
1 pkg. UNCLE BEN'S® wild and long grain rice 6 green olives, chopped 12 green olives 1/2 green pepper or sweet red pepper, chopped 1/3 c. mayonnaise 1 tsp. hot curry powder 4 oz. jar marinated artichoke hearts Prepare rice according to package directions; omit butter. Cool. Mix onions, olives, and pepper with cooled rice. Blend together mayonnaise, curry, and marinade from artichokes. Add to cooled rice and vegetables. Chop artichokes and add. Stir vigorously and refrigerate for at least 3 hours so that flavors blend well. |
