ARTICHOKE AND RICE SALAD 
1 pkg. chicken flavored rice mix
2 green onions, sliced
1/2 green pepper, minced
8 green olives, sliced
2 (6 oz.) jars marinated artichoke hearts
1/4 tsp. curry
1/3 c. mayonnaise

Cook rice as directed on package, omitting butter. Cool to room temperature. Add onions, green pepper and olives. Drain artichoke hearts and save liquid. Mix curry and mayonnaise with artichoke liquid and add to rice. Add artichoke hearts. Refrigerate until serving time. Garnish with tomato wedges if desired. This salad will keep for several days.
