ARTICHOKE AND RICE SALAD 
1 pkg. beef flavored Rice-A-Roni mix
1 jar marinated artichoke hearts, chopped (save marinade)
1 stalk celery, chopped finely
2 green onions, chopped
1 tbsp. pimiento
1 (4 oz.) can chopped ripe olives
1/2 c. yogurt, sour cream or mayonnaise

1. Prepare Rice-A-Roni according to package directions using only 2 1/2 cups water.

2. When rice has cooled slightly, add the artichoke hearts and marinade. Add celery, onion, pimiento and olives.

3. Refrigerate rice mixture. When cool, add yogurt, sour cream or mayonnaise. Serves 6.
