RICE - ARTICHOKE SALAD 
6 oz. pkg. chicken Rice-A-Roni
2 green onions
1/2 green pepper, diced
2 (6 oz.) jars marinated artichokes
1/2 tsp. curry powder
1/3 c. mayonnaise

Cook rice package according to directions, omitting butter. Remove from heat and turn into a bowl to cool. Add onions and pepper. Drain artichoke hearts, saving the marinade and chop into small pieces. Mix reserved marinade with curry powder and mayonnaise, blending well. Add dressing and artichoke hearts to the rice mixture. Mix and chill at least 12 hours. Serves 6 to 8. Note: Add cooked chicken or shrimp for a main dish.
