GERRY'S EASY CROCK POT CHILI | |
For a 7-quart “Crock Pot”: 1 (28 oz.) can peeled whole Roma (plum) tomatoes 1 (10 oz.) can Ro-tel "Chili Fixin's" 1 (40 oz.) can Red Kidney Beans 3 (12 oz. ea.) bottles Heinz Chili Sauce 1 (14.5 oz.) can plain diced tomatoes 2 to 2 1/2 lbs. ground sirloin 1 large sweet or yellow onion Add all ingredients to Crock Pot. Tip - Spraying the crock pot with olive oil makes clean up a whole lot easier. Whole Roma (plum) tomatoes - add first and quarter in the crock pot. (pierce before quartering - do not squeeze or you will get squirted!) Ro-tel Chili Fixin's - add. Hanover Kidney Beans - Redskin Light Red - Drain and reserve liquid. Heinz chili sauce Tip - The bottles don’t empty well so put a little Kidney Bean liquid in each, cap & shake to help flush out. Plain diced tomatoes - add. Ground sirloin - browned just the way you like. Drain & reserve 2 or 3 tablespoons of fat. Large sweet or yellow onion - chopped & sautéed in reserved fat. Add reserved Kidney Bean liquid leaving at least 1-inch from the top of the crock pot to prevent boil over. Discard any excess. Mix, cover & cook on low for 6 hours - stir occasionally.
