ALL TIME BEST CARROT CAKE 
2 c. sugar
2 c. flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 1/2 c. Mazola oil
4 eggs
3 c. grated carrots

Mix all dry ingredients. Add oil and mix in eggs one at a time. Mix all well after eggs are in. Pour into 2 greased round cake pans. Bake at 350 degrees for 35 to 40 minutes. Cool then frost.

FROSTING:

1 lg. (8 oz.) pkg. cream cheese
1/2 stick melted butter
2-3 tsp. vanilla
1 box white confectioners' sugar

Cream all ingredients together and frost cake after cool.
