SUMMER CHICKEN SALAD | |
1 1/2 c. cooked cubed chicken or turkey 3 oz. water chestnuts, thinly sliced (about 1/2 c.) 1/2 c. grapes 2 tbsp. chopped celery lettuce leaves 1/3 c. low-calorie mayonnaise 2 tbsp. white wine vinegar 1 tbsp. soy sauce 1 tsp. curry powder 1 tsp. ground ginger 1 tsp. grated onion 1. Combine chicken, water chestnuts, grapes and celery in small bowl mound on lettuce leaves. 2. Stir together mayonnaise, vinegar, soy sauce, curry, ginger and onion in bowl. Pour dressing over salad. |
