SUMMER POTATO SALAD 
5 lb. new potatoes
1 (8 oz.) jar mayonnaise
1/2 c. milk
1 med. onion, diced
2 celery stalks, diced
Italian salad dressing
Salt & pepper
Parsley
Carrot shavings

Boil potatoes with skins on until fork can be inserted easily (not too soft or potatoes will fall apart). Allow them to cool, then peel and slice into small pieces. In separate bowl, slowly add milk to mayonnaise and stir until thin and creamy. Combine this with onions, celery and potatoes and mix gently. Stir in desired amount of Italian salad dressing. Salt and pepper to taste. Garnish with parsley and carrot shavings. Refrigerate.
